Our farm treasure BUCKWHEAT
Delicious buckwheat is returning to Central European countries, and there are great reasons for it. Firstly, because of its nutritional values – it is rich in protein, carbohydrates, fiber and phenolic compounds, and secondly, buckwheat is used to produce gluten-free food.
Many people think buckwheat is a cereal, but in reality it is a nut, belonging to the group of pseudo-cereals.
Buckwheat does not contain gluten, which distinguishes it from many cereals such as wheat.
The largest buckwheat producers are China, Ukraine, Kazakhstan and the Russian Federation. In Korea, Italy, Japan and China, buckwheat is most commonly consumed as various noodles, while in Eastern European countries like Poland, buckwheat is mainly consumed as groats.

Rutin
Rutin is a flavonoid with strong antioxidant properties found in buckwheat, especially in its young shoots where rutin concentration is 27 times higher than in grains.
Quercetin
Quercetin is one of the important bioflavonoids present in fruits, green leafy vegetables, seeds, buckwheat and nuts. Known for anti-inflammatory and blood pressure-lowering effects.
Vitexin
Vitexin is a chemical compound found in many plants such as buckwheat. Has antioxidant, anti-inflammatory, anti-cancer, analgesic and neuroprotective effects.
D-chiro-inositol
Buckwheat contains relatively high levels of D-chiro-inositol, which has anti-hyperglycemic effects, helping to lower blood sugar levels and support diabetes control.
